Equipment

  • pressure cooker

Instructions

  • peel potatoes, we use a rotato for the bulk of it and just hand peel the ends
  • wash the potatoes well
  • slice into half inch chunks
  • soak in water to avoid discoloration and remove starch
    blanch for 2 minutes
    rinse well
  • put into jars leaving 1 inch space
  • add one half to one teaspoon salt per jar
  • add hot water to jars leaving an
    inch headspace
  • put into pressure canner and add three inches water or water as listed in your canner instructions
  • process for 40 minutes at 10 psi
