Instructions
peel potatoes, we use a rotato for the bulk of it and just hand peel the ends
wash the potatoes well
slice into half inch chunks
soak in water to avoid discoloration and remove starch
blanch for 2 minutes
rinse well
put into jars leaving 1 inch space
add one half to one teaspoon salt per jar
add hot water to jars leaving an
inch headspace
put into pressure canner and add three inches water or water as listed in your canner instructions
process for 40 minutes at 10 psi
