Can I substitute Sugar with Honey in Cooking/Canning?

For cooking and baking 1/2 – 2/3 cups honey for each required 1 cup sugar should be used. Remove 1/4 cup of other liquids for each cup of Honey used.

The amount of Honey you choose to use should be based on the particular Honey you are substituting with. The sweetness and flavor of varies greatly based on hive location and which resources are available to the bees in that hive.

Adding 1/4 tsp of baking soda for every cup of honey is said to help balance the flavor of baked goods. This was information given to me from a friend’s Mother and not something I have yet tried.

Cooking with Honey should be performed at a temperature of 25 degrees F lower than what is required. The reason for this is that Honey will burn at a lower temperature than sugar.

Canning

In canning foods I generally use 1/2 cup Honey for 1 cup required Sugar for Jams and Jelly. Pectin is a must when doing this as is using 1/4 cup less of any other Liquid for each cup of sugar.

When canning Pickles, use the general rule of thumb mentioned above, 3/4 cups honey will equal 1 cup sugar.
